These tender buds of the tea are steamed and not dried as in black or green teas. White Peony is made from just the unopened silvery buds and two tender leaves. It is picked in spring and gently withered to yield a refreshing, easy-drinking tea, full of soft fruit flavors and melon notes with a lingering sweet aftertaste. The USDA has certified that this tea has been grown with organic farming methods with on chemical pesticides used in cultivation.

Leaf: one bud and one or two leaves, it has a mix of soft, plump needle tips and small, young leaves which are sage green on one side and pale with fine silvery hairs on the other. The white tea is called white Poney King, becuase the quality is very good.

Tea Brewing Method: The tea is best prepared with below boiling water at bout 75 degrees Celsius and produces a slightly viscous glittering pale yellow color with evidence of floating white hairs that reflect light. The flavor and fragrance should be delicate, light, fresh, and slightly sweet. Steeping should be for slightly longer than other white teas, up to 6 minutes, and the amount of tea to be used is usually higher.
